A “jack of all trades” and natural entrepreneur, Delores Tronco opens The Greenwich with over 18 years of experience in the hospitality industry. After leaving Denver in 2016 to open The Banty Rooster in New York City’s West Village, Tronco returns west to bring her brand of convivial restaurants back to where it all started.

As sole proprietor, Tronco conceptualized and designed the restaurant’s concept and interior and actively oversees the restaurant’s operations, wine, and bar programs. Prior to The Greenwich, Tronco held various leadership roles, including Founder/CEO of the nationally-acclaimed Work & Class, her first restaurant in Denver, and Founder/Director of beloved Denver pop-up The Justice League of Street Food. The Greenwich is located in Denver’s RiNo district, the same neighborhood where she began as a restauranteur with her brainchild and first restaurant, Work & Class, in 2014.

As an established restaurateur, Tronco is committed to creating a restaurant that is a living, breathing incarnation of everything she cares deeply for: hospitality, excellence in craft, leadership with integrity, and the people who make great restaurants the special places they are. The Greenwich fosters a culture that allows the restaurant to do just that and aims to deliver an incredible culinary experience to match. In addition to overseeing the restaurant’s operations, Tronco also directs the wine program at The Greenwich, creating a well-curated and diverse list of bottles ranging from familiar favorites to newer, more esoteric styles and producers.

Tronco’s success is evidenced by a laundry list of awards and press, including three James Beard nominations, coveted spots on the 2014 list for both Zagat and Thrillist’s Best New Restaurants in America, and winning the Colorado Restaurant Association’s prestigious Newcomer of the Year Award 2014. Tronco was also named Colorado’s Thinker of the Year in Hospitality by the Denver Post in 2013.

Outside the restaurant, Tronco is an avid reader, runner, yogi, and baker who can often be found with her Colorado Mountain Dog, Mr. Charlie and her kitten, Jack.

Happy Hour: Monday - Friday, 5 - 6 PM / ALL NIGHT Tuesday
