DEAR DENVER,

People often ask who we are and where our name came from.   It was through a series of twists and turns that started and ended in Denver. you see, i’m just a part denver, part new york city girl whose love language is restaurants.

after selling my first restaurant, work & Class, in 2016, i left denver to chase my restaurant dreams in new york city. the next four years were filled with highs and lows—going to wine school, working as a general manager, a server, and even a personal assistant before opening ‘the banty rooster’ in december of 2019, just 96 days before the pandemic hit.

after tearfully closing ‘the banty rooster’ on august 22, 2020, i moved back to denver and found a restaurant space on larimer street, just 8 blocks north of where it all started.

As a tribute to all that was lost in those dark years, I named the restaurant after my favorite neighborhood in New York City—Greenwich Village.

So you see, The Greenwich is my one-more-shot restaurant.  it’s the scrappy kid in the fight, the underdog in the big game, a final last-ditch effort to beat the odds and make it.

It’s about never giving up, And a tribute to the art of hospitality and serving food and drink that is both soulful and delicious.

I hope that you’ll come and be a part of what we’ve built – a place to celebrate life with what we do best – food and drink plus that it-factor that simply makes a room feel right.

We are that place where life’s infinite highs and lows play themselves out—first dates, last dates, promotions and lay-off’s, rehearsal dinners, birthdays, and Tuesday nights when you’re simply too tired to cook.  We invite you to dress up a little, dress down if that’s your vibe, or come as you are—regardless, we’ll welcome you with open arms and that just-right table for whatever you’re up to.

Denver, I’m thankful for you and for this one last chance, and I’d be honored if you’d join us for dinner.

With Love,

Delores Tronco, Founder
